Ultra just adds some extra vegetation otherwise not much difference. I suggest Medium with Screenspace reflection ON. Looks and plays great. I have GTX 1650.
My pc can run it smoothly on medium and the second picture medium and ultra looks almost the same so I'm happy

This doesn’t matter for just walking, when battling, can you keep the FPS at average 60+ before throttling?
My optimal settings for a Radeon RX 5600 XT with a core clock of 1820mhz (effectively reaching 1786mhz on full load) and a memory clock of 1784mhz:

Resolution scale: 100%
Adaptive quality: Off
Anti-aliasing: Low (I don't see much difference with the AA and it seems to have a noticeable impact in the FPS)
World details: High
Clutter: High
Shadows: Very high
Volumetric clouds: High
Water: High
Screen space reflections: On
Environment textures: High
Character textures: High
Depth of Field: Off (I don't like it)
Motion Blur: Off (I don't like it)
I get between 50-65FPS with these settings in crowded areas, and always higher than 60 in areas with few or no civilians. If I turn the Shadows setting to High instead of Very High, the experience is much smoother. I don't see much difference in the shadows from High to Very High, and the difference I see may be just placebo effect, so I am considering reducing it to High.
I have a 6 yr old PC with 960gtx, i5 6600, 16gb ram. I play valhala at medium graphics with low fps of 30 and high fps of 57.
High graphics suits me
Wish you had added vram usage for thess settings. I have 4gb 1050ti and i seriously doubt i can run this game smoothly. And low settings are not satisfying for me.

I play it on 1440p medium, with textures on high 60 fps on a RTX 2060. Fps drops to 50 on cutscenes

ac valhalla on low graphics is not that bad
is it worth playing on lowest? my laptop gets hot, and i want it to have a good lifespan
Medium is good enough for me plus i get my 60 fps as soon as i go high settings the stutters are real!
even at ultra my fire, smog , breath graphic don't look good it look pixelated.

summary
low : poor grass + no grass movement
med : no grass movement
ultra : ok
we can finish the game on Medium with 50/60 fps why need ultra
so for me Medium is enough
