You are correct about some fish not being able to eaten by humans. There is a way to remove the scales from the fish which is easier using your knife and that is to run your knife over the fish from the rear with the blade raking over the scales and they will come off easily, except for fish with skins like the catfish, or shark where the skin have to be pulled back from the head area and using the pliers part of the utility kit can be used to pull the skin back to the tail.
