Aloha Lilly, (I live on the Big Island of Hawaii) Wondering what country you are in? Green coconuts are better when they are partly matured with spoon meat inside. You wont get diarrhea from these cocos , at least I have never heard of that happening to any one I know. The meat is soft and very sweet and they call it spoon meat here because it is easy to scoop it out with a spoon. This stage of the coco's life is more desired than fully mature. Another real delicacy is natural candied coconut. These can sometimes be found on the beach near the tree and are coco's that have fallen down, the milk is absorbed into the meat and becomes candied and very sweet. This only occurs when it is very hot & dry. I use a machete & a pick axe to open mature nuts. by putting the blade end of the pick in the ground with the pointed side up and then repeatedly stabbing the husk and twisting it all around until the husk can be peeled off, then I use the machete to crack open (after I have drunk the milk through the eyes) by tapping it repeatedly. Any how I used to climb the trees when I first came here and harvested lots of coconuts, but I always got scraped up and also it was a bit scary in some of the taller trees. Anyhow that is my input about coco's and you seem to have no problem with them. I also understand that in a survival situation one wouldn't be too picky at all about the stages you find them in.
