Also. Start your coal fire like a bbq. Use wood kindling, wood feather sticks and tinder. Get a rolling fire with kindling. Add your coals. And a little bit more kindling. When the coals light, add a few more coals or add your smoking wood. I soak smoking wood for an hour in something non flammable. When coals are white, you're ready to cook. It takes longer to cook, I'd use more coals.

When my brothers 6 sons were growing up they would cook up their own box of mac and cheese they all loved it, if they wanted Ravioli they would just open can and grab spoon they would not eat if you warmed it up they wanted it out of can at room temp so parents bought these by the cases each month LOL

Hi.Glad you were able to swich back to your old stove.Any stove should be 3/16 to 1/4 inch steel properly welded.If you are really into smoking,Pine and spruce are the grossest smoke.Any hard would even willow or cotton wood is better.Pine and spruce have too much pitch which can destroy your meat.Harwoods can be totally green and still give a nice flavor.

Good video Jay I'm glad you didn't burn your tent down and you didn't get hurt and I sure hope you remembered to take the ladder with you when you went outside to visit mother nature in the morning after all that good ham fried potatoes and onions and mushrooms that ladder will sure come in handy for climbing back down that way you don't fall and twist your ankle

Well, nice swap and its handy to have a spare stove huh !? (yep, thje ham looked good)
BTW – you could always go score a little buddy heater as a back up to the wood stove in an emergency, they work OK and it would have let you stay out over night. Besides you already have the propane tank out there anyway so think about it. Get one and leave it in a tote bin in the tent.
Also, both those existing stoves, the barrel and that crap little square one have the one MAJOR flaw, the guage of the steel used in them is pure crap. Obviously with the barrell stove you don't have a choice, it's a barrel but that manufactured square one??!? I hope your new sexy one is at least 10 guage , all around and lets hope it's welded too.
It's nice to see it wasn't a burn thru after all but that thin shit steel is still the problem anyway ………. good luck !!

When you cook beans like that , while fraying the ham or bacon before you put the beans. You should fry with onion and after adding beans, add garlic powder and pepper.

OK, now at 22:00 and you burned out the crappy stove uh? No loss there but a few questions: 1. was/is there a grate in the bottom of the stove? Did it come with one (i'm guessing not becasue it is a POS but anyway and 2. if there was no grate for the bottom, did you toss in a good inch or two of sand in the bottom of the stove ? Do that of you don;t have a grate in to and it's a good idea to do it anyway. If not guess what happens, you'll burn em out! Espec if it's as crappy as that one. What a piece of junk, and that little poorly cut in shit box draft on the front proves it …… No loss but a good excuse to get a new one. Maybe # 3 won't be a third piece of junk …..

That smoking job was cold smoking if no or little heat was present, great way to smoke salmon brine in a sweet brine..

I am a professional chef and have extensive experience with smoky barbecue foods as well. You definitely need high heat with high fat content pork to create a dish like crackle which it appears you’re trying to do. Maybe using pork belly? Scoring the pork belly was the right move but you definitely have to have some heat in order to render the fat and create the texture that you’re looking for. There are a few additional preparation‘s to consider when creating this dish but you’re on the right track

Awesome work Jay, and bang on your decision to change out the stoves, I'd hate to rely on a propane two burner stove for heat in a non insulated camp in the winter. That ham looked delicious !! I'm going to make one this week

If you can, get a deflector plate so that the heat isn't directly on the meat.
