Savanna does badly need mobs. The jungle has pandas and parrots, mountains has goats and llamas, the icy biomes has polar bears and the savanna has… more pig, sheep, chickens?
I started playing minecraft relatively recently, and, I remember I was genuinely disappointed with the savanna. It ruined my immersion a bit just seeing the plain biome animals in the savanna.
At least just reskin some animals and put them there, it would be minimal effort and not affect performance or anything. Like, reskin a wolf to a wild dog, an ocelot to a caracal, a cow to a buffalo or wildebeest, donkey to a zebra, goat to a kudu or what-ever. Just one or two animals that makes a little sense.
Imagine how cool and immersive the game would be with just a little more animals inhabiting it. Even if they aren't useful. I know having ten more types of meats would only clog up the already clogged up inventory, but, the polar bear just drops fish so they don't need to make new drops. I just want to see a deer when I'm in the birch forest, a lion when I am in the savanna, some monkeys in the jungle, an elk in the dark oak woods. The polar bear is already pointless, and it still livens up the world a lot. I still enjoy meeting them when I do, or use two hours trying to get one back to my base. Same with panda. Imagine mr polar bear having a seal, so he can actually hunt something. Imagine seeing a vulture in the badlands, an oryx or a camel in the desert.
More animals should be so easy to add, they don't even need to announce it, make a big deal out of it or put a back story or do any work on it, just add a couple more moving mobs in a random update to enchance the immersion a little. Breathe life into the world. Such a simple little thing to do.

That new UI looks disgusting. They try to push that nostalgic 8-bit style away, whereas old-game vibes are key to Minecraft.
Savannah update has to add a ostrich mob which you can ride and is super fast.
